Yes, by now I think you are probably catching on that it is very possible to grow veggies in containers. Just make sure to have enough room to space the seedlings out. In the case of head lettuce, that would be about 10-12 inches apart.
Head lettuce matures in about 55 days, though some varieties may take up to 90.
